slicing guide increases strength of pocket and better life of
bread mould. 3 or 6 pocket in a set, No.8 wire in rims, made of
25 SWG tin sheet, Top and bottom make one set of mould to make

90°, 45° AND CROSS CORRUGATED POCKET BREAD MOULD.
DAZZLE IS A
ANSWER OF BAKERY AUTOMATION. Extensive impact and compression
tests prove dazzle 90° corrugated pockets are over 100% more
resistant to the damaging abuse of modern bakery operations then
the smooth tin plate mould. 90° corrugated moulds offer many
distinctive advantages to the actual bread product as a result
of a 30°0 less surface contact with the dough pieces. The
possibility of air pockets throughout the make-up and baking
cycle is eliminated to insure a uniform baked product, sticking
is prevented for easier depanning, and glaze life definitely
increased. The greater surface area of the corrugations is
responsible for picking up more heat in the oven resulting in
faster baking. |
